Best Apple Cake Recipe

Happy Tuesday!

Today I’m sharing my favorite Apple Cake Recipe.

I’ve tried a few different apple cake recipes over the last few Autumn seasons, but this one is my absolute favorite.

While I’m not a food blogger, or a great cook/baker, I do enjoy delicious food and easy recipes.  And if something is easy to make and delicious, why not share…right?!!

Recipe:

4 cups chopped Apples (I use Honey Crisp)

2 cups all purpose flower

1 1/2 cups Sugar *

2 teaspoons baking soda

4 teaspoons ground cinnamon (you can add as much as you want really)

1 teaspoon salt

1/2 cup vegetable oil

2 eggs, beaten

2 teaspoons vanilla extract

*I’ve substituted Sugar with Agave Nectar in the past

You can add a 1 cup chopped walnuts for a crunch but I prefer it without.

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Grease
and flour a 9×13 inch pan. In a medium bowl, stir together the sugar and
apples, set aside. Sift together the flour, baking soda, cinnamon and salt.

2. In a large bowl stir together the oil, eggs and vanilla. Add the apples and
sugar and mix well.  Stir in the dry ingredients (then the nuts if you decided to add them). Pour into the
prepared pan and spread evenly.

3. Bake  in the preheated oven for 40 – 45 minutes, or until cake springs back to the
touch.

It tastes just as good, if not even better the following day.

Enjoy!
